    Frittata. Always my go-to when time and energy are lacking. Potatoes, onions, cooked in my cast iron skillet with whatever vegetables and/or meat are in the fridge (I love chard and bacon). Add 4-5 eggs, cook until set on the bottom, top with cheese and finish under the broiler. With a salad, it’s wh#7&a821t;s for dinner about once a week.
